Eric Brödner and his team of Bergkristall chefs focus on foods that conserve blood sugar levels, thus implementing Michel Montignac's nutritional method in many dishes. Wherever possible, local products are used in Bergkristall cuisine and white sugar and white flour are avoided.
The soothing effect of herbs and spices also flows into the gourmet experience at the 4-star Superior Resort Bergkristall. Artificial flavour enhancers, on the other hand, are banned from our creative cuisine.
Rich in vitamins and vital substances, healthy and delicious – this fits together extremely well in our Bergkristall cuisine.

The GLYX principle according to Michel Montignac
The French nutrition expert Michel Montignac has developed a balanced diet which recommends foods from the categories carbohydrates, fats and proteins in terms of their positive properties and their effect on metabolic processes.
The glycaemic index (GLYX) of food is decisive. If this is high, the blood sugar level rises and allows fat reserves to build up. With a low glycemic index – as with less processed, fibre-rich foods – positive effects occur.
Look for the "M" in our restaurant
Experience pure enjoyment with the GLYX-principle of Michel Montignac in the Bergkristall and do something good for your body. Simply follow the dishes marked with an "M" at the buffet and on the Bergkristall menus. These dishes consistently contain no white sugar or white flour.
