Kitchen philosophy

Energy on your plate

At Bergkristall in Oberstaufen, food should inspire two things: joie de vivre and energy. That’s why we cook according to the GLYX principle: without sugar, without white flour - but full of flavour, provenance and seasonality. We also follow the 80/20 approach: 80% mindful, 20% pure enjoyment. Allgäu specialties have their well-deserved place. And yes, dessert is absolutely included. Our goal: A good gut feeling - throughout your entire holiday.

Valuable cuisine - Resort Bergkristall

Valuable cuisine

We’re convinced that healthy can taste extraordinary. In our kitchen, we focus on freshness, seasonality and short distances: plenty of vegetables, high-quality oils, excellent fish and premium meat. Preferably from local producers. We cook what gives us energy. Light for the body, full of flavour. No artificial enhancers. The result: stable blood sugar, a clear mind and authentic taste. The backdrop? The Allgäu, with panoramic views and nature’s own cinema. In our restaurant, you dine at your own pace - six courses or just one. And later, raise a glass at the Hansi Bar. Cheers!

Striking a healthy balance and indulging yourself from time to time – that's our food philosophy at the Bergkristall.
Balance instead of restriction - Resort Bergkristall

Balance instead of restriction

Our recipe for a life in balance? 80% mindful, 20% indulgent - without a guilty conscience. We cook according to the glycaemic index: no industrial sugar and no white flour. Instead, good fats and wholesome carbohydrates, high-quality proteins and natural ingredients that keep your blood sugar steady. For you, that means: no more afternoon slump and sustained energy throughout the day. Our 80% is light, creative, perfectly combined - and always prepared with care. And the remaining 20%? Just as essential to life: Allgäu Kässpätzle, sinfully good desserts, a special glass of wine. You choose, we serve. Balance that works in everyday life. Mindful indulgence? Exactly like this.
